01 Grease a 9x5 Loaf Pan and preheat the oven to 325 F.
02 Starting with the streusel topping: mix together the melted butter, ½ Cup flour, ¼ Cup brown sugar, 2 tbsp sugar and ½ tsp pumpkin pie spice in a small Bowl and place in the fridge while make the bread.
03 In a large Bowl, mix together the sugar, brown sugar, pumpkin puree and oil until fully combined. Add the eggs and vanilla, mix and set aside.
04 In another Bowl, Whisk together the flour, baking soda, cinnamon, pumpkin pie spice and salt.
05 Add half of the dry ingredients into the wet ingredients and mix. Once combined add the milk followed by the remaining dry ingredients. Mix until batter is smooth
06 Pour mixture into Loaf Pan. Remove the streusel from the fridge, break apart into uniform clumps with a fork, and sprinkle on top. The top of the loaf should be completely covered.
07 Bake for 1 hour and 20 minutes or until a toothpick inserted in the center comes out clean. If it needs more time, put back in the oven in 5 minute intervals until done.
08 While the loaf bakes, mix together powdered sugar and maple syrup to make the glaze.
09 Once loaf is out of the oven, immediately top with glaze. Serve warm or keep in the fridge in an airtight container.
