How to make Chicken & Rice Meal Prep Bowls
01 Cook the rice according to package instructions or use prepackaged cooked rice
02 Combine all the seasonings in a small Bowl. Coat all of the chicken breasts with the seasoning mixture.
03 Add olive oil to a large Skillet over medium-high heat. Once the pan is hot, add the chicken and cook for 5-7 minutes on each side until fully cooked and no longer pink in the middle. You can use a meat thermometer to confirm the Internal Temperature is 165 degrees F..
04 While the chicken is cooking, steam the broccoli until tender.
05 Assemble your meals by evenly dividing the chicken, rice and broccoli into 4 separate, sealable containers (I prefer glass containers). Each container should contain about ½ Cup rice, ½ chicken breast and ½ Cup of broccoli.
06 Store the sealed containers in the fridge for up to 4-5 days. Reheat in the microwave when you're ready to eat. Enjoy!
