How to make Viva's Zucchini Bread
01 Preheat oven to 325 F (165 C)., Grease and flour 2 - 8” x 4” Loaf Pans. Protip: For easy loaf removal later, line pan with Parchment Paper!
02 In a Bowl, Sift together the flour, baking powder, soda, cinnamon and salt.
03 Beat oil, eggs, vanilla, and sugar together into a large Bowl. Add Sifted dry ingredients into the creamed together mixture, beating well. Fold in nuts and zucchini until well mixed. Split mixture evenly between the prepped pans
04 Bake for 40 to 60 mins, or until toothpick inserted in the center of loaves comes out clean. Cool loaves in the pans on rack for 20 mins. Remove bread from pans, and let cool completely.
