2 Cup(s) Pasta Sauce plus more for serving
9 Lasagna Noodles (uncooked)
10 Ounce(s) Frozen Spinach thawed and squeezed well
15 Ounce(s) Ricotta Cheese
½ Cup(s) Parmesan Cheese (grated)
1 Egg (large)
1 Pinch(es) Salt to taste
1 Pinch(es) Ground Black Pepper to taste
9 Tablespoon(s) Mozzarella Cheese (shredded) about 3 oz

How to make Spinach Lasagna Rolls

  Preheat your oven to 350°F and set aside a 9x12" baking dish.

  Cook the lasagna noodles according to package instructions, then drain.

  In a medium Bowl, combine the spinach, ricotta, parmesan, egg, salt and pepper. Mix until combined.

  Lay out lasagna noodles on a piece of wax paper on the counter. Pat noodles dry, then spread ⅓ Cup of the ricotta mixture on each noodle.

  Pour about 1 Cup of sauce in the bottom of the baking dish. Roll each noodle carefully and place seam side down in the baking dish.

  Ladle the remaining sauce over the rolls and top each roll with 1 tbsp of mozzarella. Cover baking dish with tin foil and bake for 40 mins or until the cheese on top is melted.

  To serve, ladle some sauce on the plate and place lasagna roll on top. Enjoy!
