How to make One-Skillet Mexican Quinoa
01 Fire up the Skillet over medium-high heat and add some oil! Sauté jalapeño pepper and garlic until you can smell the fragrant aroma.
02 Now, it's time to add the black beans, tomatoes, corn, quinoa, and chicken broth. And don't forget to season it with pepper flakes, chili powder, cumin, salt, and black pepper - it's all about the flavour!
03 Bring it to a boil, cover with a lid and reduce heat to low. Simmer until the quinoa is tender and the liquid is mostly absorbed - about 20 minutes!
04 Finish off with some avocado, lime juice & cilantro (the perfect combo!) and stir until it's all combined. Voila! One-Skillet Mexican Quinoa - easy & delicious!
