Cute, no-baking, no cooking tiny lemon tarts that are easy and fun to make! For best results, have all ingredients at room temperature.
One large lemon yields 1/4 cup of juice and 2 tsp. of zest.
Add some pure vanilla extract, ideally alcohol-free (I love the brand 'Simply Organic').
Add a touch of ground turmeric for a yellow tart.
Use raw sunflower seeds or unsweetened, shredded coconut instead.
One serving is equal to 1 tart.
Refrigerate in an airtight container for up to a week. Separate layers of the tarts with a piece of parchment paper, as needed.
