How to make Giant Ginger Cookies
01 Preheat oven to 350°F (175°C). In a medium Bowl, Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt, and set aside.
02 In a large Bowl, combine the margarine + 1 Cup of sugar and beat until light & fluffy. Add in the egg, then stir in the water and molasses. Gradually combine the Sifted ingredients into the molasses mixture. Form dough into walnut-sized balls, and roll them in the remaining 2 Tablespoons of sugar. Place the cookies approx. 2 inches apart on an ungreased Baking Sheet and press down lightly.
03 Bake in preheated oven for 8 to 10 minutes. Let the cookies cool on the Baking Sheet for 5 minutes, then remove to a Wire Rack to finish cooling. Keep in an airtight container.
