How to make Coconut Cream Pie
01 Preheat your oven to 350 degrees F (175 degrees C) & spread coconut on a Baking Sheet.
02 Bake until golden brown (stirring occasionally) & get ready for the next step!
03 In a Medium Pot, combine half-and-half, coconut milk, sugar, flour, corn starch, eggs & salt.
04 Bring to a boil, stirring constantly, & cook for two more minutes. Remove the pan from the heat & stir in ¾ Cup toasted coconut & vanilla extract (reserving the remaining toasted coconut to top the pie).
05 Pour the custard into the pie shell & chill until firm (about 4 hours).
06 Finally, top with whipped topping & the reserved coconut.
