How to make Broccoli and Cheddar Soup
01 In a Stock Pot over medium-high heat, melt butter and add onion. Saute until tender, 3-5 mins. Whisk in flour and continue stirring until mix turns golden brown, about 5 mins. Slowly pour the half-and-half into the onion mixture, stirring until smooth. Add in chicken broth and season with salt and black pepper.
02 Reduce the heat to medium-low and simmer until thickened, about 10 mins. Add in broccoli, carrot, and celery and simmer until vegetables are tender yet crisp, about 20 mins.
03 Reduce heat to low and add cheddar cheese to soup and cook, stirring occasionally, until the cheese melts, about 5 mins.
04 If texture of soup is too thick, slowly add in ¼ Cup of water until desired consistency is reached.
